One of the best parts of the Christmas holiday at our house is always lunch on Christmas Day. My wife Teresa uses the leftover “mojo pork” “from our Christmas Eve dinner to make me a sándwich cubano. Her recipe follows the MIami “tradition”recipe”. It starts a loaf of fresh cuban bread. This is sliced into 6 or 8 inch lengths and cut horizontally. Mayonnaise and yellow mustard are put on each side. She adds a slice of swiss cheese, pork, and ham. She finishes it with pickle slices. She “presses the sandwich with two pans till the crust is crispy and the cheese starts to melt. She then adds the “papitas” (Pik-Nik Original Shoestring Potatoes).
I really, really like a good Cuban sandwich. We have discovered a few like the one at Growler’s that we really enjoyed. As good as they are, it’s never quite the same as when it is made for you by the person you love. Teresa’s sándwich cubano 2022 was just delicious. I am one very lucky man.
